Pete's Bagels team to open new cafe and coffee shop Seymour's in downtown St. Pete
The team behind the popular Pete's Bagels is opening a new spot for breakfast, lunch, and coffee in downtown St. Pete.
Seymour's will debut this February at 407 Central Avenue inside the historic Snell Arcade. The space was previously home to Samurai Cat Japanese Cafe and Bakery.
“We are excited to bring the Pete's vibe to downtown St. Pete. We will focus on having a full cafe and bakery with an old vintage St. Pete vibe in the Snell Arcade,” Owner Steven Peterman said in a conversation with St. Pete Rising.
“This will be more of a cafe experience - it won’t be a bagel shop like Pete’s.”
Seymour's, an homage to Peterman's grandfather, will serve sandwiches on rye bread, bagel sandwiches, soups, fresh-made pastries, and coffee courtesy of St. Pete-based Look Alive Coffee Roasters.
“My grandfather was a typical guy from New Jersey with an upbeat attitude,” said Peterman. “He was born in 1928 in Newark, NJ. He liked his bagels scooped, ate his pickles on the side, and loved a good rye bread sandwich.
“He was content—or at least that’s what he wanted you to think. If you asked him on his worst day how he was, he would always say, ‘It’s good.’”
The sandwich menu will include selections like a tuna salad sandwich and a chicken salad sandwich. The bagel sandwiches will be served open-faced with a variety of toppings. Also available will be a unique twist on the traditional bagel with lox.
As for soups, diners can expect a made-from-scratch matzo ball soup plus additional rotating seasonal soup offerings.
Seymour's will also serve made-from-scratch pies by the slice and quiches, in addition to items like fresh scones and a strawberry rose yogurt bowl.
A full espresso bar will offer a variety of the popular iced and hot coffee beverages.
“Look Alive will oversee the coffee program at Seymour’s. They’ll be using space as a testing ground so customers may be able to try new experimental coffees from time to time,” Peterman said.
The new cafe is expected to open in February and like Pete's, there will be a small merch section.
Seymour's will be open daily from 7:30 a.m. to 6 p.m. with to-go and delivery options through third parties available.
