Melt n Dip dessert lounge coming to former Rollbotto space in downtown St. Pete

A new dessert café is on its way to downtown St. Pete.

Melt n Dip, a dessert chain known for waffles, crepes, and gelato, plans to open at 221 1st Street North at Plaza Tower near Sundial and Beach Drive.

The new shop will occupy a 2,300-square-foot space that previously housed Rollbotto, a sushi restaurant that opened in 2012, closed in May 2024 after more than a decade in business.

Harrison Gault and Jay Billings of Commercial Partners Realty represented the tenant, while Kevin Yeager, also of Commercial Partners Realty, represented the landlord.

Melt n Dip allows guests to create their own chocolate-covered creations.

Start with a crepe, waffle, or slice of cake, then pile on the toppings, such as white, dark, and milk chocolate, crushed Oreos, banana slices, brownie bits, apple cinnamon, pistachios, cotton candy, and whipped cream.

Alternatively, diners can choose from a menu of composed desserts.

Among Melt n Dip’s most popular items are the Triple Chocolate Crepe, topped with milk, dark, and white chocolate; and the Éclair Pyramid, a stack of éclairs filled with Melt n Dip’s house-made cream and drizzled with Belgian chocolate.

The café also features molten cakes, brownies, milkshakes, and espresso drinks.

The brand first opened in the Middle East and has since expanded internationally, with U.S. locations in 2021. The brand currently has 11 locations in the United States, according to its website.

The downtown St. Pete location will be Melt n Dip’s first in Pinellas County and third in Florida, following locations in Orlando and Temple Terrace.

Melt n Dip opens every day at noon and is known for staying open late, often until midnight or 1 a.m. on weekdays and as late as 2 a.m. on Fridays and Saturdays.

The downtown St. Pete location is expected to open by December 1st.
