SkyBeach Resort, a newly renovated resort on the southern tip of St. Petersburg, is introducing new waterfront restaurant in December for locals and guests alike.
The newest concept, Luma, will be an elevated Mediterranean restaurant on the 18-acre property at 6800 Sunshine Skyway Lane South.
Located just off the resort’s main lobby, Luma draws its name from lumen, Latin for "light,” a nod to the radiant St. Petersburg sun and the luminous flavors of the Mediterranean.
The concept blends regional soul with global sophistication, offering a menu rooted in fresh, locally inspired ingredients and coastal influences.
Designed by SkyBeach Resort owner Ben Willner, Luma’s aesthetic is a marriage of coastal elegance and vintage charm - think art deco garden party meets a refined 1950s seaside lounge. The space overlooks the resort’s newly renovated marina.

Highlights of the menu will feature both land-and-see main dishes, such as:
Grouper Gone Bananas: A bold tiradito featuring black grouper, coconut essence, banana chutney crafted from on-site fruit, and sweet potato
Guava BBQ Lamb Ribs with napa cabbage slaw
Braised Boneless Short Ribs paired with olive-garlic mash and harissa aioli
Seafarer’s Spread: A shareable dish with fish, crackers, and dips
Crostini Trio: A bruschetta spread
Pasta alla Norma: A Sicilian pasta dish with eggplant, marinara, and basil
Complementing the menu will be curated cocktails, like the Sultan’s Sip, a mix of bourbon, date syrup, saffron, and cardamom bitters, and the Casablanca Cooler, a vodka concoction flavored with Moroccan mint tea and honey.
Luma marks the third dining concept introduced since Willner Realty and Development Company (WRDC) acquired the property in 2022 for over $17 million and commenced a sweeping renovation.
SkyBeach Resort reopened in July 2024 with 113 renovated guest rooms, a refreshed lobby, an expanded private beachfront, a rebuilt marina, a sports complex with pickleball courts, and more.

Luma will join several new eateries on the property, including Paradeco Coffee Roasters, which has an existing downtown St. Pete cafe; the SkyBar + Grille, a two-story open-air restaurant overlooking the water; and SeaSide Tapas, a tropical-themed restaurant and bar with French and Asian influences.
