Popular south St. Pete restaurant Mullet’s Fish Camp joins Tropicana Field

Mullet’s Fish Camp, the popular locally owned restaurant situated at 3901 6th Street South, will debut a new location at Tropicana Field on Friday.

In addition to all baseball home games, Mullet’s will also be open for all special events at Tropicana Field starting on Friday, November 24th with Enchant Christmas, an annual month-long winter wonderland featuring over four million sparkling lights, ice skating, festive food, and holiday shopping.

Mullet’s co-owner Nick Brown confirmed to St. Pete Rising that the eatery will have a location in the Trop’s Third Base Food Hall next to Fo’Cheezy Twisted Meltz, another local restaurant that has locations in downtown St. Petersburg and St. Pete Beach.

It will likely bear the same name — Mullet’s Fish Camp — but will primarily serve the restaurant’s famous smoked chicken wings, which have gained a cult-like following since the eatery opened two years ago.

“People tell us all the time they are the best wings they’ve ever had,” Brown said in an interview with St. Pete Rising. “Who knew a seafood restaurant could make some of the city’s best wings?”

Instead of tossing the wings in sauce, when Mullet’s debuts next season at the Trop, it plans to serve its wings dry with all the sauces on the side. 

“If you’ve got a bunch of saucy wings, it gets kind of messy, which isn’t great when you’re trying to enjoy a baseball game,” Brown said.

Mullet’s will offer all three of its house-made sauces for baseball fans to dunk their wings in – the Merman Sauce, a Carolina Gold-style sauce with a Cajun kick; the Dirté Sauce, Mullet’s take on an Alabama white BBQ sauce; and the Classic Buffalo. Made-in-house bleu cheese and ranch will also be available if you’re feeling extra saucy.

Although the house-made sauces are fantastic, what makes Mullet’s wings truly exceptional is that they’re slow smoked with high-quality wood such as cherry and pecan and then fried, giving them a rich flavor and unbeatable crunch.

The seafood restaurant started out with one massive smoker when it first opened; however, demand for the smoked wings forced the eatery to buy another, even larger smoker.

Brown said Mullet’s won’t need to add a third smoker to accommodate the new location at Tropicana Field. Given its current capabilities, the restaurant can churn out up to 3,000 wings per day.

“We have the capacity to handle it,” he said. “As far as staff, it’s just a matter of putting together a small satellite team that can execute for us.”

The Tropicana Field announcement comes hot on the heels of news that Mullet’s Fish Camp will be developing a dessert bar across the street from its primary location. The 2,000-square-foot dessert bar will occupy 3910 6th Street South, formerly the home of Coquina Meat Market, and will have a capacity of 100 split between indoor and outdoor dining. 

Ice cream will be featured prominently on the menu, along with milkshakes, specialty coffee, and other after-dinner treats.

“Nothing too crazy or off the wall,” Brown said. “I just want to serve a good, affordable malted milkshake. And there'll be some form of key lime pie, small cakes, and other single-portion desserts.”
